Lunch: Easy Veggie Pasta Salad

To run regularly, you’ve got to have discipline – not only to make yourself get up and go, but to eat properly so you can keep up your energy. I enjoy cooking, but I am by not means a chef (just ask my boyfriend). I try to stick to simple, healthy, quick recipes (although I did learn some pretty sweet knife skills at Eatz LA this past week – if you’re in the LA area, you should definitely check it out.)

I often find myself skipping or eating something unhealthy during lunch when I’m busy at work. To keep up my energy for running, it’s important to eat often and not skip meals – so I try my best to plan out lunches for the week so I can have it ready and feel my best. This week I whipped up some Easy Veggie Pasta Salad. Here’s how I made it:IMG_2131

  • Half a box of Whole Wheat Rotini
  • 1 Red Pepper
  • Baby carrots
  • 1 small can of black olives
  • 1 can of garbanzo bean
  • Salt
  • Pepper
  • Olive Oil
  • Italian dressing
  • Athenos Tomato & Basil feta cheese

Like I said, quick and easy – I cooked the pasta, let it cool down a bit, cut up the veggies and threw it all together. Then, I put in a few tablespoons of olive oil with salt and pepper. When I’m ready to eat, I’ll add some Italian dressing and the Athenos Tomato & Basil feta cheese. Voila! No more reasons to skip lunch 🙂
