Hi there Epic Runners! We decided it would be fun to share with you what we are obsessing about each week. It could be a blog, a recipe, a training plan…. whatever it is that we are currently swooning over. And for our inaugural obsession of the week? We’d like to introduce you to Chocolate Covered Katie.
If you have ever met Erin, Lauren or myself, you know that we LOVE to eat. I, in particular, have a crazy sweet tooth. I could eat sweets morning, noon, and night if you let me. This is fabulous for the taste buds; not so fabulous for the waistline. That is why I was SO EXCITED when my coworkers turned me on to Chocolate Covered Katie – her specialty is taking traditional desserts and putting a healthy spin on them. All of her recipes use little or no butter, oil and sugar, but you would never guess – her desserts are not lacking in the flavor/sweetness category whatsoever. Sweets without the guilt?! SIGN ME UP.
In the past week, I’ve already made 3 of her recipes and every one has been TO DIE FOR.
All 3 were ridiculous, but the pumpkin pancakes were my favorite – they literally melted in your mouth. And at 64 calories per pancake, I went ahead and had four. I can’t wait to try out the rest of her recipes – if these first 3 are any indication, I am going to be a hardcore CCK devotee. Make sure you check her out – I promise you won’t be disappointed.
